HI Now host Jobeth Devera is in the kitchen once again with Cuauhtemoc Macias, the CEO of Sinaloa Hawaiian Tortillas, and together, they’re showing off these easy-to-make cheese enchiladas with a homemade green tomatillo sauce.
For an easy but delicious cheese enchilada filling, Macias suggests the following recipe:
Shredded cheese mix (Mexican pack)
Green onion, chopped
White onion, chopped
Chicken or beef (optional)
Mix all ingredients together in a large bowl and put in the fridge until ready to use.
To make a tasty green tomatillo sauce, use the following ingredients:
Macias says put all ingredients in a pot and fill with water. Bring it to a boil then down to a simmer and cook until vegetables are soft. Remove from pot and place vegetables in a blender. Blend until mixture becomes smooth and place the sauce to the side.
Now it’s time to fry the tortillas!
Using Sinaloa Hawaiian snack size Tortillas, heat a pan with vegetable oil. Grab a tortilla and dip it into the green tomatillo sauce, then place into the pan. Fry each side of the tortilla for about 10 to 15 seconds and place on a plate. Immediately fill the tortilla with your already-made cheese mix and roll the tortilla loosely closed. Repeat steps for your desired number of enchiladas. At the end, top off with more green enchilada sauce and enjoy!
