Let's break the mold on traditional taquitos and flautas!
It’s about time for the big game. The entire Ark-La-Tex Weekend team came together to put a twist on a game time snack. In 2019 it was Super Crunch Snack Wings. For 2020, each of us brainstormed a different way in cooking the Tex-Mex favorite – taquitos. After strategic planning we came up with these Ultimate Taquitos.
Keto Taquito by Jeff Dillard
His creation is the healthiest of all the recipes for our taquitos.
- 1 lb. lean ground beef
- 1 bunch green onions
- ½ medium bell pepper
- 1 Tbsp. chili powder
- 1 tsp. cumin
- Shredded Cheddar Cheese
- Low Carb Tortillas
Brown ground beef and drain. Chop green onions and bell pepper and add to beef. Mix in chili powder and cumin. Spread mixture into a line on the tortilla. Top with shredded cheese. Tightly roll the tortilla. Bake at 425° for 12 minutes. Serve with salsa.
Pizza Taquitos by Matthew Banks
His taquito takes another game time favorite and rolls it up.
- 1/2 c. pizza sauce
- 5 slices of large pepperoni
- Fresh basil leaves
- Shredded Mozzerella Cheese
- Corn Tortillas
Add pizza sauce in a line on the tortilla. Top with rolled up pepperoni (if using the large slices), mozzarella cheese, and basil. Tightly roll the tortilla. Bake at 425° for 12 minutes. Serve with Ranch dressing.
Thai Chicken Taquitos by Robert Streeter
Why not merge two fantastic cuisines into one handy snack?
- 1/4 c. Thai Peanut Sauce
- 3-4 raw shrimp (peeled, de-veined)
- 1/4 c. cabbage
- 1 carrot
- Fresh Cilantro
- Corn Tortillas
Spoon a line of peanut sauce on to the tortilla. Top with shrimp, cabbage, carrot and cilantro leaves and stems. Tightly roll the tortilla. Bake at 425° for 12 minutes. Serve with Sweet Chili sauce or more peanut sauce.
Cherry Cheese Tortillas by Dominique O’Neill
We’ve seen several savory recipes. Here’s a sweet one!
- 1 pkg. softened cream cheese
- 1 can of cherry pie filling
- Ground cinnamon
- Corn tortillas
Spread the cream cheese down one side of the tortillas. Top with cherry pie filling in a line. Sprinkle cinnamon on top. Tightly roll the tortilla. Bake at 425° for 12 minutes. Serve with chocolate whipped topping.
